A COLLABORATIVE effort among butcher Paul Marinovich and chefs Scott O’Sullivan and Adam Sayles has resulted in the creation of a truffle sausage to be launched at the Mundaring Truffle Festival next weekend.
Mr Marinovich, who owns Adrian’s Continental Smallgoods in Mirrabooka, said the chefs approached him to be part of their team for the festival.
“I was absolutely honoured to help develop a product for the event. I’m a bit of an experimenter,” Mr Marinovich said.
“I’ve had 26 years of experience in smallgoods, been fortunate to work with smallgoods makers around Europe and have entered many competitions.
“Adam, Scott and I sat down together to get the ground work done and nut out our plan. They were really satisfied with the final product and said it was one of the best sausages they’ve ever tasted.”
The truffle-infused bratwurst remarkably took a matter of hours to come together.
Without revealing too much, Mr Marinovich said the sausage contained pork and an array of spices including nutmeg, mace, marjoram and coriander.
“I had to try the truffle first because I needed to taste its strengths, what combinations of spices I could use and the meat that would complement it.
Mr Marinovich said the product was gluten free and made with Australian pork from Wooroloo’s Linley Valley.
“It will be interesting to see how people react to it. I think it’s something really different and promotes WA’s home produce.”
The Mundaring Truffle Festival is on July 31 and August 1.
