RIVERVALE is home to a sausage king.
Jean-Pierre Dugoud from Antoine’s Prime Meats, won the WA final of the Sausage King competition in the traditional Australian pork category and will head to Melbourne next month for the national competition.
Mr Dugoud has been a butcher for about 30 years, having also spent time as a chef.
Last year he opened his first butcher store in Rivervale.
The key to a good sausage, according to Mr Dugoud is good meat.
“The sausage has a bad name, I use nice cuts of meat, from the shoulder and leg, you need the right amount of seasoning and fresh meat because you can taste the difference,” he said.
The Australian pork sausage that Mr Dugoud will make for the competition is one of the best selling sausages in his store.
He said bratwurst and kransky were also popular.
Mr Dugoud will compete in the National Sausage King Competition, on February 4 at Melbourne’s Showtime Events venue at South Wharf.
Butchers from across Australia will compete for the top snag award in six categories which include, traditional Australian, Australian lamb/open class, traditional Australian pork, poultry, continental, gourmet/open class sausages.
